Mtsvadi - Georgian Recipe


Ingredients necessary to prepare Mtsvadi:

  • 1-kilogram pork meat
  • 200 grams onion
  • Salt in accordance with your taste


Utensils for preparation and cooking:

  • Wooden chopping board (for meat)
  • Wooden chopping board (for greens)
  • Knife
  • 3 spit roasts
  • Barbeque
  • Firewood, especially vine wood collected from grape vines is ideal for cooking your Mtsvadi.


Slice the meat in 60 grams oblong pieces, salt and mix them well. Spit roast the meat slices.

Cut the onions in round or oblong pieces in advance.

Put the spit roasts with slices of meat on the barbeque with embers.

Roast all sides of the meat very well (for approximately 20-25 minutes).

Spin around the spit roasts during the whole frying process (it is essential because the meat slice maintained its fat within, that prevents the meat to become dry and keeps Mtsvadi soft and succulent.

We may serve the dish on the table in the following two ways.

Place them on the plate; spreading over them the prepared cut onion and pomegranate seeds, or

Deliver the Mtsvadi straight with spit roasts, with cut onions of them.

It is recommended to eat the dish hot.
